This week I made my husband Beef Taco Boats. He loves Tex-Mex so I thought this would be perfect for him. Plus it looked very easy for me.

Husbands Rating: 5/5. He says the prep time was a little long to assemble them but worth it.
Ease: 5/5. Just cook the beef and you are basically done.
Changes: I didn’t use onion because I forgot to put it on the grocery list. I also didn’t use rice or a pie weight. Nor did I add paprika because I just kind of used whatever spices I could find. I did use chili powder but we have a spicy spice mixture my husband likes. The boats were easy and kept them in the foil to pack them up for my husband to take to work. He added refried beans, guacamole and cheese at work.
