I am starting to get caught up on the recipe posts. Just made another meal tonight so I will have to wait and see what the verdict is.

One Pan Healthy Sausage and Veggies

Ease: 4/5. We used turkey sausage to make it healthier and I didn’t add in the cook time because of the casing.

Husbands rating: 4/5.

Changes: We didn’t use green beans. Since my husband is reheating it at work, sometimes green beans get a little soggy. We also skipped some of the herbs and we didn’t serve it on rice because of the whole low carb thing.

Ancho Chicken Tacos

I am a little behind on food posts and once I catch up on that, I can do typical posts.  I have a Houston Marathon recap, I want to talk about my cruise and just some typical updates.  Just got to remind myself to take one thing at a time.  I mean that is what Rose would have told Sue Ellen.

I made Ancho Chicken Tacos which are a pretty quick meal.

Ease: 4/5

Husbands Rating: 4/5

Changes: My husband is watching how many carbs he eats so we made it into chicken bowls without tortillas. Why is my husband watching his carb intake? He said it got out of hand around the holidays and with all the heavy lifting he is doing, he wants more proteins.  I think.  I actually stopped listening but it has something to do with carbs, proteins, weight lifting.

Crockpot Fiesta Chicken

A couple of weeks ago I made Crockpot Fiesta Chicken for my husband for his lunches. He is on a lifestyle change so I had to tweak some things to his.

Ease: 5/5. Frozen chicken, pour in can ingredients and let cook.  So easy.

Husbands Rating: 4.5/5

Changes: We didn’t use rice to put the chicken on.  My husband is focusing on more protein, less carbs.

Chicken Fajita Freezer Packet

So I decided to make a freezer packet type dinner because of the ease.  However, I never froze them. I just cooked them all because they were going to be for my husbands lunch.

Husbands rating: 4/5 the first one. After that, the reheating just made it lose its taste so like 2.5/5.

Ease: 5/5. Chop and cook.

Changes: Kept everything the same except never froze them.
