Let me start by saying I am not a holidays person.  I am not ashamed by that statement, I am just being honest.  However, I don’t want my son to be a Scrooge and have bad memories of holidays so I put on my high school theater hat and pretend I am into the holidays. This year is the first time since I have been an adult that I have not traveled for Christmas, so it means I had to cook and decorate. I am not a home decorator by any means.  I love cute homes but I also do not have the patience or creativity to pull if off. So I will post some pictures of our decorations and what we ate with recipes.

First, our Christmas tree is a mini Christmas tree that sits on the counter.  Why? We have two old boy dogs who mark their territory and then throw in a toddler that would pull down the ornaments. I decided to go on Pinterest and make an “easy” wreath. img_20161223_134006

If this survives storage, which it has already broken twice before it was put up, then I will add a huge ribbon to the top. I actually wanted it on my front door but it is too wide for my front door as the storm door then cannot shut.


This was our table setting for the meal but you can see my other decorating tip.  I just put ornaments in a flower vase. Very easy.


I also like to drink during the holidays because it makes it more tolerable for me.  I made my husband and I these drinks all day. They are equal parts champagne, Rose’ and Raspberry lemonade.  They were very good.

Now for the food and excuse the mess in the background but it was Christmas and there were gifts.


First up is the chicken meal.  It is called Slow Cooker Honey and Garlic Chicken and Veggies.

Husbands Rating: 4/5

Mistake I made: I read the recipe as 3-4 hours on high, 6-8 on low but I accidentally cooked it 3-4 on low.  Veggies and chicken had not cooked through and it was meal time.  So we put it in the oven for another 30 minutes and the chicken was done but not all the veggies were.  I will cook it again and the right way one day.

Ease: 5/5

Husbands rating: 4/5.  He said not all the noodles were cooked through but I didn’t notice that. Mine were all fine.

Lastly we have the Velvet Mashed Potatoes.

Ease: 3.5/5.  I do not own a potato masher so I was doing it by fork which was a pain.

Husbands rating:3.5/5. He forgot to tell me he wanted gravy with it and I didn’t make any.  I liked them but thought they were a little dry.  I did not add enough milk/cream cheese.
